Mozzarella Lovers Rejoice! Science Thinks Mozzarella's the Best Pizza Cheese

To all the pizza lovers out there, listen up!

Mozzarella has been proven by scientists to be the best pizza cheese of all time. Contentions from here on out shall be invalid.

So why mozzarella? Aside from it melting and blending well with other toppings, the cheese melts and bubbles, which makes it brown better than other cheeses used in pizzas.

These pro-mozzarella arguments were made in a paper entitled "Qualification of Pizza Baking Properties of Difference Cheese and Their Correlation with Cheese Functionality" published in the August issue of Journal of Food Science.

Finally, something scientific that explains the superiority of mozzarella has been put into writing.

Researchers from the University of Auckland in New Zealand compared pizzas that used the following cheeses: mozzarella, cheddar, Colby, Provolone, Edam, Enmental, and Gruyere.

They developed software precisely designed to measure blistering and  browning as the pizza baked.

Elasticity, composition, texture, water activity and moisture were also taken into consideration as to how these affect the baked pizza. In the end, mozzarella was considered more flexible than other cheeses used.

Mozzarella allowed bigger bubbles to form as water evaporated from the pizza. It also didn't contain much oil, which made the pizza brown to perfection.

Researchers also concluded that Mozzarella cheese can be used in combination with other cheeses to create the perfect gourmet pizza.

Cheddar, Colby or Edam didn't blister easily but lacked elasticity. As for Gruyere, Provolone and Emmental, the amount of free oil prevented moisture evaporation, which makes the pizza take more time to brown.

Mozzarella cheese makes a pizza appealing both to the eyes and the taste buds, said the Kiwi researchers.
